Why can't you set the calendar on the iPad to be Mon-Sun? You can on me.com and on iCal, but not on iPad. Harrumph.
The only way to do this (that I know of and have been able to find) is through changing the international settings on your iPad. There's not actually a "starting day of the week" setting as there is with other calendar programs. So while this solution is just fine if you're in the U.K., it might be less than ideal if you live elsewhere.
Modifying the international settings
Launch the settings app on your iPad and choose the General item, located on the left side of the screen, as illustrated below.

Next, you'll want to choose the International option toward the bottom of the right-hand column. This will bring up the screen below, where you can select Region Format, and then choose United Kingdom. Keep in mind, though, that this will change other things, like currency and date formats. You can always change it back if you decide it doesn't work out right.

Looking forward to the future
Looking ahead, Apple is in the process of refining its Mac version of the calendar, iCal. It's entirely possible that Apple will decide to turn its attention to the iPad version and implement some new (and much-needed) features. It's not uncommon for Apple to make changes on the MacOS and shortly thereafter implement them on the iOS side of things.
